FORT WAYNE, Ind. (WPTA21) – Portillo’s soon-to-be Fort Wayne location opened its doors Tuesday for an inside look at the progress at Glenbrook Square.
Portillo’s is a Chicago-style restaurant that specializes in hot dogs, Italian beef and burgers.
Construction started about 10 weeks ago, and training for all of the new crew members starts Nov. 4.
A little more than a month later? Portillo’s plans to open its doors to the hungry public on Dec. 5.
If you just can’t wait to try an Italian beef dog, you can find the restaurant’s food truck dubbed The Beef Bus parked outside the Ramada Inn.

Jeff Deppe, Director of New Restuarant Operations said they’ve already hired about 75 crew members.

ABC21 previously announced the location will be at Glenbrook Square near the former Sears.
Restaurant representatives say the location will offer seating for more than 190 people and a seasonal outdoor patio that can host 48 people.
The restaurant will feature a large-scale mural dedicated to the Fort Wayne Daisies. The women’s baseball team dates back to the 1940s.
The restaurant is slated to open in late 2019.
